Jellies, Jams, Preserves and Marmalades


Feeling more and more human, I felt I had enough energy to make watermelon jelly. As you can see, I over did it as usual. I have no idea if this will taste very good...it didn't smell all that great. My fear is that it won't set and I'll be stuck with twenty three jars of watermelon juice. Interestingly enough, when I went downstairs today I discovered that about one-third of my strawberry sauce had set into jam. It only took three months!

Just in case you confused about the difference between jams and jellies:

Jellies are made from fruit juice only (no bits of fruit)
Jam is made with pureed fruit
Preserves are the same as jam, but with the seeds still in the mix
Marmalades are citrus based (like with orange or lemon)
